Strawberry Whoopie Pies

This fluffy filling is super-sugary and has a rich strawberry flavor.

This recipe is adapted from the whoopie pie recipe found in Anita Chu's Field Guide to Cookies: How to Identify and Bake Virtually Every Cookie Imaginable:

Strawberry Whoopie Pie Filling

1 c halved strawberries
1/2 c butter (room temperature)
3 c (345 g) powdered sugar
2 c marshmallow creme
1 1/2 tsp vanilla extract

1. Finely chop the strawberries and then place them in a large bowl. Add the butter, powdered sugar, marshmallow cream, and vanilla extract and beat until everything is well combined.
